Tl;dr-Honestly, this is a great place to visit while in Taos. As long as you don't get our server.
Also, make a reservation and don't roll the dice on a table.

Highly recommended.
So why 4*?
Our particular server was just not great. She seemed to be actively trying not to work. You know when that changed? When it became apparent that my family of four was spending more than 50 / person. That's too sad.
The tables adjacent to us had much better service than we did. They were constantly checking on their tables and getting their drinks.
The drinks we got (by the time we got them) were watered down. We watched the bartender, who btw was amazing, pour them and then they sat for about 7 min while our server was nowhere to be found.

We ordered soup/stew. She brought it to us without a spoon. After waiting 4 minutes I asked a bus boy for a spoon because she dropped it off and then she went AWOL.

Look, as my wife said, maybe she had a bad day. Maybe her personal life is rough right now
As a human being I'm sensitive to that. As a patron, I'm annoyed because I have to separate personal and business life. I do it out of necessity. Because I'm expected to i unfortunately expect others to also do it.

Outside of our server, everything about this place was great. Would go back and just request a different server. I saw our neighbors experience and know it was better than ours

This spot is listed on NewMexico.org as offering an "upscale dining experience which offers New Mexican classics with an imaginative twist" so I was quite looking forward to it. Instead, the menu offered a pretty run-of-the-mill southwestern dining option at upscale prices. Meh, that's fine, I figured it'd be a great meal anyway.

Alas. My daughter ordered the soup - loaded potato - and I ordered the Pork Adovada. Both had a solid flavor profile that was comoletely botched with an overwhelm of salt. Yikes! We couldn't finish either dish, so we satisfied our hunger after.

Service was good and timely! Ambiance is friendly and culturally on brand! Just super overpriced for a generic menu with an execution that lacked.

Oh, also. The menu posted online is not the same menu at the restaurant. Similar, but not the same.

We stayed at the adjacent hotel so we figured it would be an easy dinner. The Adobe Bar was full so we went across the threshold to Doc Martin's and were pleased to see we made it for happy hour! Just kidding... The happy hour only applies to the bar 20 feet away.
So we got the $17 trout bruschetta and $23 burger... Both serving sizes were very small and both were meh. If I'm not mistaken the fries were frozen and still hard in the middle.

Service was good and ambience fine.

I have generally made it a rule never to eat in a hotel restaurant, because in my long experience of attending conferences all over the country, I usually find that the meals there are overpriced, unoriginal, and underwhelming. Doc Martin's, located in the Historic Taos Inn, turned out to be a glorious exception to that rule. The bartender/waitress who served my companion and me was exceptional: very friendly, attentive, and efficient. And the menu servings were unique, picture-worthy in presentation, and absolutely delicious. It turned out to be an experience to remember (in a good way!) and I give this restaurant my highest recommendation.

The red crunchy bits (red corn chips) on the outside of the rellenos is brilliant! And so delicious inside.
The green Chile stew is still #1 in New Mexico (AFAIK), please tell me where it's better than here?
And the chocolate ice cream was so incredibly rich and the chorros were amazing and fresh.
Always music every night here and no cover charge.

Had a reservation and showed up 15 min early - told we could grab a drink in the bar and get seated soon. Great for us and what we planned, except no one came to serve at a table in the bar and when we approached the bartender they said, if you have a reservation go over there they have their own bar. We went back, waited, and were eventually seated. Greeted by a friendly server, Michael, after a bit and ordered drinks - 20 minutes later our drinks arrived. We’d been told of two items no longer available, but when we ordered, one item we wanted was also no longer available, still fine - we’d share the other order and be good. It was another 30 min plus for our food to arrive and when the plate was set down they said “be careful” as though it was hot and then quickly commented that “it’s not hot”. No, it wasn’t - rice and beans cool at best, tamales maybe slightly warm, all had sat for a very long time! We offered to pay for drinks but not the awful food that we hadn’t sampled even a quarter of between the two of us and to the servers credit, he agreed that he wouldn’t be happy with what was served and comped our drinks too. Not sure what the issues there are, but certainly not the place it once was. It was a shame to be visiting from a far distance and essentially missing a Taos meal when there are so many great restaurants in town.

Never left a review before but I wanted to make sure no other vegans went to this place thinking they would have some good plant-based options. $29 yam dish is the only vegan option or a salad you have to order without the cheese, or chips and salsa/guac. Don't read the rest of the reviews about vegan options, those reviews are 2+ years old. Don't look at the online menu because all of those options are gone, too. The wife, kid and I had just gotten into Taos for vacation and were looking for a place to eat before we settled in where we were staying. We found the only restaurant available that had vegan options and was still open, so we rushed over. We waited for 20 minutes to be seated, and we were notified after being seated that every vegan option we had heard about was no longer available. A super expensive yam dish was essentially all there was and a $22 beet salad that my wife could have made in 5 minutes for $4. Our waiter was helpful and they did their best to help us with the limited options. They made some suggestions for other places we could try while we were here, and that was very appreciated. The atmosphere was nice.

Sat on the patio on a Monday evening. Prickly pear margarita (pictured) was below average and just tasted like tequila and lime. Enchiladas were enjoyable, both red and green chile were very yummy. Did seem like the waitress forgot about us at the end of our meal - we asked to see the drink menu again and she said she’d be right back with it, only for her to disappear for 20 min and completely forget. By that point neither of us wanted another drink and just requested the check.
